Eileen (Knapke) Siefring, age 81, of Philothea, Ohio, died on Monday, January, 29, 2024 at Celina Manor. She was born July 21, 1942 in Celina to the late Roman & Clara (Penno) Knapke. On October 28, 1961 at Holy Trinity Catholic Church in Coldwater, she married David ‘Doc’ Siefring and he preceded her in death in 2016.
She is survived by children, Bill (Ruth) Siefring of Fort Recovery, Theresa (Tim) Brady of Coldwater and Craig Siefring of Philothea, six grandchildren: Ray (Brittany) Siefring, Jessica (Terrell) Cochran, Eddie Siefring, Jason Siefring, Clay (Grace) Brady, and Cole Brady; great-grandchildren, Kipley and Wylie Siefring, Nova, Bryson, and Tatum Cochran, Clay II and Arizona Brady.
Siblings and in-laws, Jerry (Janice) Knapke of Coldwater, Lester Steinlage of Englewood, Luetta Forsthoefel of Coldwater, Rose Ann Siefring of Philothea, Mary Siefring of Coldwater, and Dorothy Siefring of Coldwater.
She is preceded in death by son, Gary Siefring, siblings and in-laws, Mar Jean Steinlage, Bernice (Don) Wellman, Barthel Siefring, Omer (Monica) Siefring, Orville (Jeannette) Siefring, Bernard Siefring, Elmer (Mildred) Siefring, Charles Siefring, Don Forsthoefel, Herbert (Stella) Siefring, Gerald Siefring, and Roger Siefring.
She was a member of St. Mary’s Catholic Church, Philothea. She was a member of the St. Mary’s Ladies Sodality. Past member of the St. Cecilia Auxiliary. She was a former president of the Coldwater Eagles’ Auxiliary and longtime 4-H advisor for the Philothettes. She was a 1960 graduate of Coldwater High School. Eileen was a bookkeeper for the Orchard Tree Restaurants. She was affectionately known as a baker of cakes for many weddings and special occasions.
Mass of Christian Burial will be held 10:30 AM on Friday, February 2, 2024 at St. Mary Catholic Church, Philothea. Burial will follow in St. Mary’s Cemetery. Friends may call on Thursday from 3 PM to 7 PM and on Friday from 9:00 AM to 10:00 AM at the Hogenkamp Funeral Home in Coldwater. Memorials may be made to EverHeart Hospice and Celina Manor.
